Allura Red AC is a red azo dye that goes by several names including Allura Red, Food Red 17, C.I. 16035, and FD&C Red 40.[1] It is used as a food dye and has the E number E129.
In the United States, Allura Red AC is approved by the FDA for use in cosmetics, drugs, and food. When prepared as a lake it is disclosed as Red 40 Lake or Red 40 Aluminum Lake. It is used in some tattoo inks and is used in many products, such as soft drinks, children's medications, and cotton candy. It is by far the most commonly used red dye in the United States, completely replacing amaranth (Red 2) and also replacing erythrosine (Red 3) in most applications due to the potential health effects of the two dyes.
Allura Red AC (also known as Red 40) is a red azo dye that goes by several names including: Allura Red, Food Red 17, C.I. 16035, FD&C Red 40, 2-naphthalenesulfonic acid, 6-hydroxy-5-((2-methoxy-5-methyl-4-sulfophenyl)azo)-, disodium salt, and disodium 6-hydroxy-5-((2-methoxy-5-methyl-4-sulfophenyl)azo)-2-naphthalene-sulfonate. It is used as a food dye and has the E number E129. Allura Red AC was originally introduced in the United States as a replacement for the use of amaranth as a food coloring.
It has the appearance of a dark red powder. It usually comes as a sodium salt but can also be used as both calcium and potassium salts. It is soluble in water. In water solution, its maximum absorbance lies at about 504 nm. Its melting point is at 300 degrees Celsius.
Allura Red AC is one of many High Production Volume Chemicals. Some manufacturers of Allura Red AC include: Asim Products, Sanchi Chemicals Pvt. Ltd., and Warner-Jenkinson Europe Ltd.
Red AC was originally manufactured from coal tar but is now mostly made from petroleum. Despite the popular misconception, Allura Red AC is not derived from any insect.
The proper chemical name for Red40 is: 6-hydroxy-5-[(2-methoxy-5-methyl-4-sulfophenyl)azo]-2-naphthalenesulfonic acid which is a terribly long word for a very tiny molecule.
Lakes: Often on a label you'll see a color listed as a lake, i.e.: "FD&C Red #40 Lake" or "Blue 1 Lake" So what's a lake? Most of the dyes in use are water soluble, which is wonderful if you're coloring a juice or syrup. It becomes a bit of a problem if you're trying to color the outside of a medicine tablet. The manufacturer doesn't want the color to run off if the pill gets a little wet. The answer is to use a dye in a lake form. A lake is a solid, non water soluble form of a dye. It's produced by mixing the dye with Aluminum Hydroxide. By itself Aluminum Hydroxide is a safe food ingredient and it's often sold as an antacid. When combined with Red Dye #40, the chemicals form a deep red powder that can be applied to the outsides of tablets, gumballs and other solids. You may also notice this form listed in the ingredients as "Red 40 Aluminum Lake"

Other “natural” food additives might be more problematic. For example:
•Annatto extract – a carotenoid extracted from a tropical tree seed (Bixa orellana), often added to cheese. Has been implicated in IgE mediated allergic reactions.
•Cochineal extract or carmine is a red dye made from crushed cochineal beetle. It’s now listed on the ingredient label as cochineal extract or carmine (before 2009 it didn’t need to be). 70,000 beetles may be killed to produce one pound of this red dye. Has been implicated in IgE mediated allergies.
•Caramel color – this makes cola brown and beer gold. Caramel color is the most commonly consumed food coloring ingredient in the world. It’s produced by heating carbohydrates (like fructose, dextrose, or invert sugar) with a food-grade acid (like sulfuric, phosphoric, or citric) to break the sugar bonds.
•Titanium dioxide, which makes things white (such as your soymilk), has recently been classified by the International Agency for Research on Cancer (IARC) as an IARC Group 2B carcinogen — ”possibly carcinogenic to humans”.
•Aluminum, used as an additive in a variety of foods such as cake decorating materials, canned seafood (including caviar), and relish, might cause adverse effects related to reproduction, neurological behavior and neurological development.
Red dye allergy (also known as Red 40 Allergy) occurs to both adults and children, who are unable to digest red dye. Red dye is commonly referred to as food coloring #2, which is named carmine or cochineal extract. Another common source of red dye allergy is food coloring #40 which could be found in medicine and food. This ingredient is commonly used to preserve, prepare and put coloring to food. Although commonly misconstrued as food allergy, red dye allergy is actually a food intolerance.
The increase of food with preservatives and other artificial ingredients, also paved way for the increase of people with red dye allergy. Kids are commonly affected because they fancy eating snacks and sweets more. While the symptoms of red dye allergy can be treated, it's very hard to diagnose. That's because red dye allergy doesn't necessarily display visible allergic responses.
Skin Reactions: Just like other types of allergies, common skin symptoms can be attributed to red dye allergy. Itchiness, redness and slight swelling of the skin are some of these symptoms. Appearance of hives, rashes and thick bumps which contain fluid are also dermal signs of red dye allergy.
Angioedema is a more severe skin reaction caused by red dye allergy. It's characterized by the swelling of the deeper layers of the skin. This might look like raised welt's on the skin's surface. Angioedema can also be seen in the tongue, eyelids and the area surrounding the face.
Gastrointestinal Problems: Anyone who is allergic to a particular kind of food will have some type of gastrointestinal problem. In this case, red dye can cause diarrhea, bloating or give you a gassy feeling. It will usually start as a simple stomach ache. Then it can progress to a more serious digestive problem, such as vomiting and persistent excretions. Once the food with red dye has been excreted, the gastrointestinal stress will also cease.
Flu & Respiratory Problems: Red dye allergy can cause certain parts of the respiratory system to swell. It's hard to diagnose people with red dye allergy, because most of the symptoms exhibited are too common. The best example of which is fever and flu. Itchiness of the throat, eyes and nose, as well as constant sneezing are also caused by red dye allergy. While these symptoms can easily be treated with antibiotics and antihistamines, the allergy can go undetected for years. This is why most people are wheezing, coughing or a general whistling in the chest.
Anaphylactic Shock: Red dye allergy, if left untreated, can end up becoming severe. Anaphylactic shock is the worst stage of this allergy. Its early signs are respiratory symptoms paired with swelling of the entire body. This inflammation can make it hard for someone to swallow breathe. It is treated with the injection of adrenaline or epinephrine.

Red #2 was banned in the United States in 1976 because the food dye proved to be carcinogenic and had the potential to cause cancer. Red #40 was originally manufactured from coal tar, but is now made from petroleum. The food dye is commonly known as Red #40 but has several different names these names include Allura Red AC, Food Red 17, Calcium Lake, Aluminium lake, and C.I.16035.
